Chicken & Sausage Shish Kabobs

  • 1 Lb smoked sausage
  • 4 boneless, skinless chicken breast
  • 1 onions
  • 1 green bell peppers
  • 1 zucchini
  • 14 cherry tomatoes
  • 3 red potatoes , parboiled
  • 4 Tbsp apricot preserves
  • 8 skewers
Cut sausage, chicken, onion, green pepper, zucchini, and potatoes into 1-inch pieces and assemble along with tomatoes on skewers. Grill over medium-high heat for 15 to 20 minutes. During the last two minutes of grilling, glaze with apricot preserves.
