Zesty Pork Stew

  • 2 Lb boneless pork sirloin roast , cut into 1 in. cubes
  • 1 can stewed tomatoes , undrained and chopped
  • 1 1/2 Cup water
  • 3 Cup red potatoes , peeled and cubed
  • 2 Cup onion , thinly sliced
  • 2 Cup carrots, grated
  • 1 tsp crushed red pepper
  • 1 tsp dried oregano
  • 1 tsp cumin seed , toasted
Combine all ingredients in a Dutch oven. Bring to a boil. Cover, reduce heat, and simmer 30 minutes. Uncover. Cook 25 minutes longer, or until vegetables are tender.
